Haddock Francese

Ingredients:
• 1/4 cup sliced almonds
• 4 haddock tail pieces, 3 to 4 ounces each
• Salt and pepper
• 3 large eggs
• A splash heavy cream
• 4 tablespoons extra-virgin olive oil, divided
• 3 tablespoons butter, divided
• 1/2 cup dry white wine, eyeball it - a couple of glugs
• Handful flat-leaf parsley, finely chopped
• 1 lemon thinly sliced
• 3 tablespoon capers
• 2 cloves garlic, finely chopped
• 1 pound Fresh spinach
• 12 grape tomatoes halved
• Flour for dredging

Directions:
Toast almonds over moderate heat until lightly browned and reserve.
Preheat a large nonstick skillet over medium –low heat. Season the fish with salt and pepper. Beat eggs with cream. Add 2 tablespoons extra-virgin olive oil to the skillet, swirl the oil in the pan then add 2 tablespoons butter, cut into small pieces. Dredge haddock in flour and then dip the fish into the eggs making sure fish is completely covered in eggs. Add fish to pan and cook on both sides until just golden, 5 to 6 minutes total. Transfer fish to a plate and cover with a loose foil tent to retain heat.

Add chopped garlic and let it come to a sizzle, then add tomatoes, wine, lemons, and capers to the pan and turn up heat to medium high. Reduce by half, 2-3 minute, then add 1 tablespoon butter and a handful of parsley to the pan.. Turn off heat. Stir in spinach until just wilted and season with salt and pepper. Remove foil tent, pour sauce over fish and top with sliced almonds.

Haddock with Beurre Blanc Sauce

Beurre Blanc Sauce
Yield: Makes about 1 cup
Active Time: 15 min
Total Time: 20 min

Ingredients
1/2 cup dry white wine
2 tablespoons finely chopped shallot
1/3 cup heavy cream
1/4 teaspoon salt
1/8 teaspoon white pepper, or to taste
2 sticks (1 cup) unsalted butter, cut into tablespoon-size pieces & chilled

Preparation
Boil wine, and shallot in a 2- to 3-quart heavy saucepan over moderate heat until liquid is syrupy and reduced to 2 to 3 tablespoons, about 5 minutes. Add cream, salt, and white pepper and boil 1 minute. Reduce heat to moderately low and add a few tablespoons butter, whisking constantly. Add remaining butter a few pieces at a time, whisking constantly and adding new pieces before previous ones have completely liquefied (the sauce should maintain consistency of hollandaise), lifting pan from heat occasionally to cool mixture. Remove from heat, then season to taste with salt and pepper and pour sauce through a medium-mesh sieve into a sauce-boat, pressing on and then discarding shallot. Serve immediately.

Note: Wine mixture can be reduced, and cream and seasoning added, up to 1 hour ahead. Boil cream 1 minute before adding butter. 

Haddock:
2 lb of Fresh Haddock
2 cups of Cracker meal(or ground Ritz Cracker)
1 Cup of AP Flour
1 egg
1 cup of milk
½ cup of butter
2 tbs of veg. Oil
2 tbs of chopped parsley
Salt and pepper

Preparation    
Cut haddock into 2 oz pieces. Whisk eggs and milk together. Melt butter in Skillet over medium/low heat with veg. oil. Season flour with salt and pepper. Dredge fish in flour, then milk/egg mixture, and then cracker meal. Add to skillet and cook over medium low heat about 2 minutes per side until fish is cook through. Remove from pan, place on plate, top with beurre blanc sauce, and garnish with parsley.

Creamed lobster was created by Clara Harris, a local restaurant owner, several decades ago. It caught on quite quickly, and can now be enjoyed at many restaurants throughout Yarmouth & Acadian Shores. The dish is still relatively unknown outside of our region, and is a true local specialty.

Since its inception over fifty years ago, creamed lobster has evolved from being a restaurant treat to a dish that many cook and enjoy at home. As with any recipe, each family modifies it to suit their tastes

Hot Lobster Sandwich

Ingredients:

Two tbsp butter or margarine.
One cup of cubed lobster
2 tsp vinegar
10% blend (Heavy Cream) to cover sauteed lobster
4 pieces of buttered toast.

Directions

Heat butter to medium highbefore adding the lobster pieces.
Add vinegar to the sauteed lobster. Vinegar helps to thicken the milk and also takes away any fishy taste the lobster might have.
Reduce heat to medium-low and add blend to the lobster, so it will thicken and make a tasty lobster cream sauce

Plating the hot lobster sandwich.

Lay the toast butter up. Start by adding some lobster mixture, including the juice which is the best part, over the toast.Add the second slice of toast on top, then cover with the lobster mixture.Hot lobster goes well with mashed potatoes, carrots and peas. Fresh cut french fries work go very well with this dish.

Rappie Pie

Rappie pie, or rapure in French, is a well loved traditional Acadian dish. It’s a delicious mix of potatoes and chicken, and it’s unique to the region. It’s not a pie in the conventional sense, as there is no pastry crust. But it is a popular local dish, and in many households, a tradition for special occasions like birthdays or Christmas. 

The whole idea behind rappie pie is to remove the liquid from the potatoes then reconstitute the remaining potato pulp with hot broth. This mixture is then poured into a pan and baked. Chicken is arguably the most popular meat added to the pie but you can use whatever meat or seafood you want. Popular choices include bar clams, venison, corned beef and rabbit. Whatever seasoning you add to the broth will define the flavor profile of the pie. Everyone has their own recipe for making rappie pie but the following one should give you a basic idea of how it works. Then you can start experimenting with your own flavors.

There are 3 ways to make rappie pie, the first being the traditional way which is to grate the potatoes to separate the potato pulp from the liquid. The second way is to use a juicer to facilitate this same process. The third way is to buy a store bought block of pre-grated potatoes.

A note on salted green onions: They are cut up green onions, preserved in salt. They are a common ingredient in Acadian cooking and can easily be made at home. Check out the recipe here.         

 INGREDIENTS:

- 20 lbs bag of potatoes or 1 store bought block

- 2 whole chickens, preferably stewing hens  

- 2 onions, chopped

- 2 heaping tablespoons of salted green onions 

- 40 cups water

 - Salt and pepper to taste

 - Butter or non-stick spray to grease the pan

You will also need a large bowl, a very large pot, and a 40x60cm baking pan.

  DIRECTIONS

- Cut up the onions and add them to the 40 cups of water

- Add the salted onions, some pepper and salt if needed to the water

- Bring the water to a boil until the chickens are cooked (about an hour)  

- Once the chickens are cooked, let them cool and then debone them. Cut up the chicken meat into bite-sized pieces.

METHOD 1

- Peel the potatoes

- Grate the potatoes and strain them in a cheese cloth to remove the juice

- Discard the juice and save the potato pulp  

METHOD 2

- Peel the potatoes

- Run them through a juicer to remove the liquid

- Discard the juices and save the potato pulp   

METHOD 3

- Use a store bought block. d’Eon’s Rappie Pie is a good choice. 

- Place the grated potato pulp, or store bought block into a large bowl.

- Gradually add 30 or so cups of boiling chicken broth to the potato pulp. It works best to add about 4 cups of broth at a time. Make sure to continually stir the pulp and broth with a whisk. The more broth you add, the runnier your rappie pie will be.

- Pour half of the mixture into a greased pan.

-  Add in the chicken pieces to the top of the potato mixture

- Pour the remaining potato mixture onto the top of the chicken in the pan.

- Bake the pie in the oven for three hours at 400 degrees Fahrenheit.
